This decadent little pudding cup contains multiple layers of chocolate deliciousness – smooth and silky mousse, creamy and chewy chia pudding and crunchy chocolatey Buckinis – it’s the perfect balance of textures that makes this little parfait a winner. Serve for dessert, or swap out the chocolate topping for fresh berries and enjoy it for breakfast.

Chocolate pudding
- 3 soft medjool dates
- 1 ripe avocado
- 1 tbsp Cacao Powder see product
- ¼ cup nut milk (or coconut milk)
Choc chia pudding
- ¼ cup Chia Seeds
- 1 cup coconut milk
- ½ tsp Vanilla Powder
- 1 tbsp raw honey or Coconut Nectar
- 2 tbsp Cacao Powder see product
Decadent chocolate parfaits
- Chocolate mousse (see above)
- Choc chia pudding (see above)
- Loving Earth Chocolate Buckinis see product
- Loving Earth Dark 85% Chocolate see product
- Loving Earth Cacao Nibs see product
method
- Step 1Blend all of the chocolate pudding ingredients in a high-speed blender until smooth and creamy.
- Step 2To make the choc chia pudding, add the chia seeds and cacao powder to a glass jar and stir to combine. Mix the coconut milk, vanilla and honey until combined then pour half into the jar with the dry ingredients and mix well. Then add the remaining liquid whilst stirring. Leave at least 4 hours or overnight in the fridge.
- Step 3To assemble parfaits, layer ¼ of the mousse, ¼ of the chia pudding, and top with bukinis and dark chocolates.
