We love the blurred lines between breakfast and dessert and these Banoffee Jars are just the ticket. Perfectly acceptable to have to start the day thanks to the protein packed buckinis, almond meal and peanut butter, a good dose of coconut oil and yoghurt for healthy fats, and of course banana...but equally as acceptable to have post dinner or even gym for the same reasons!
It’s pink, it’s beautiful, it’s delicious, and a perfect Mothers’ Day treat for the special ladies and Mumma Bears in our lives.
Not only is it raw, vegan, gluten-free, dairy-free, and refined sugar free, but it’s also filled with nutrients thanks to Loving Earth’s delicious buckinis: a grain-free, gluten-free, wholefood mix that combines raw activated buckwheat (a protein-packed seed) with superfoods such as Maca and Mesquite. And let’s not forget the good dose of antioxidants due to Loving Earth’s raw cacao powder. We reckon all of this makes it more than ok to go back for seconds!
So, tell Mum to put her feet up, pop the kettle on, and serve up an afternoon tea filled with love and a whole lot of goodness.
- Warm, gooey chocolate mug cakes for dessert. This one would make for a pretty heavenly breakfast too! It's so quick and easy to make (literally 5 minutes), you could really have it any time of the day. For something a little different, try buckwheat flour (using our plain buckinis!) in place of almond meal.
This decadent little pudding cup contains multiple layers of chocolate deliciousness – smooth and silky mousse, creamy and chewy chia pudding and crunchy chocolatey Buckinis – it’s the perfect balance of textures that makes this little parfait a winner. Serve for dessert, or swap out the chocolate topping for fresh berries and enjoy it for breakfast.
These are tarts that you need in your life. Loving Earth nailed the combination of mandarin and chocolate but I thought I’d take it to the next level. The flavours of the sweet refreshing mandarin and earthy, rich cacao are a match made in heaven. The Buckinis and Paleo Mix add a beautiful crunch and the silky smooth chocolate on top is irresistible. These are my go to for dinner parties as they have that wow factor to impress guests.
Pure heaven in a mouthful. This combination of flavours, just wow.
Caramelising the bananas first adds a great depth of flavour, the passionfruit adds a beautiful tang to the rich, creamy mixture. And just when you’re getting sad that the popsicle is nearly over you get to the best bit! Salted Caramel Chocolate with crunchy activated Buckinis!
Plus, they are oh so pretty. Serve these on a hot day as a dessert or to kids when they get home from school.
Sweet potatoes make the best muesli bars. These beauties are delicious and are especially amazing when eaten straight from the freezer.
Buckinis are activated buckwheat kernels. Being activated means they are super easy to digest. Interestingly, although its name can be misleading, buckwheat is actually not a grain. It is a fruit seed, related to rhubarb and sorrel. This makes is gluten free and therefore perfect for coeliacs and those who are sensitive to gluten grains.
This is a super simple and delicious chocolatey treat that takes no time at all. By using a premixed pack of Chocolate Buckinis, we’ve done the hard work for you! Just add Coconut Paste and Cacao Butter and let set in the fridge! These are the perfect healthy treat alternative for school lunches and birthday parties.
Store these in the fridge or in the freezer if the weather is really warm so they don't melt by morning tea time!
We are never short of blown away by Kat and the amazing creations she takes along to some of our Sydney retailers. Her recent recipe is no different. Here she combines dried fruits and nuts with superfoods and native wattle seeds to create a glorious afternoon snack!
This recipe is very forgiving and loves experimentation! You can try coconut flour or buckwheat flour in the place of Buckinis and experiment with different dried berries/fruits and spices and then adjust the coconut butter or regular organic butter as required.
