Warm Winter Chocolate Mug Cake
Warm, gooey chocolate mug cakes for dessert. This one would make for a pretty heavenly breakfast too! It's so quick and easy to make (literally 5 minutes), you could really have it any time of the day. For something a little different, try buckwheat flour (using our plain buckinis!) in place of almond meal.
ingredients
Chocolate Mug Cake
- 2 tablespoons almond meal
- 2 tablespoons Loving Earth cacao powder see product
- 2 tablespoons coconut sugar see product
- 1/4 tsp baking powder
- 1 tablespoon melted Loving Earth coconut oil see product
- 3 tablespoons almond or coconut mylk
- 1/2 tsp pure vanilla extract (optional)
- 2 tablespoons Loving Earth MYLK Chocolate, roughly chopped see product
method
- Step 1Add the almond meal, cacao, sugar, salt and baking powder to a mug. Stir or whisk to combine.
- Step 2Pour in the coconut oil, nut-mylk, vanilla into the mug with the dry ingredients and stir well with a spoon. Sprinkle the chopped chocolate on top.
- Step 3Cook in the microwave for 20-30 seconds. It will likely be a little undercooked in the middle at this point, which is what I like, but if you want it cooked more, microwave it another 10-20 seconds.
- Step 4Eat immediately!
