There is a lot of hidden refined sugar in most store bought jams so it's great to have a healthy recipe in your repertoire. This recipe is really simple and is inspired by one of our lovely Instagram followers! Simply spread on toast, mix into porridge or use as part of a jammy cookie or slice recipe. - Emily Williamson
ingredients
- 600g frozen or fresh blueberries
- 2 tbsp Coconut Nectar see product
- 1/2 tsp Vanilla Powder see product
- juice of a lemon
- 4 tbsp Chia Seeds
method
- Step 11.Combine all the ingredients, apart from the Chia Seeds, in a small pot over a low heat and simmer for 5 minutes until the mixture becomes syrup like. Remove from the the heat.
- Step 22.Add the Chia Seeds and mix. With the back of a fork gently break up the blueberries and let the jam cool before storing in a glass container in the fridge.
