Featured Foodie: Stacey Clare - A Healthy Mum

Stace loves to create healthy recipes the whole family can enjoy, together. She is an accredited health and wellness coach with years of experience in the kitchen developing recipes for both clients and her family! 

 

What are your ‘non-negotiables’ when it comes to diet & lifestyle?
Real, whole and organic foods. It sure has taken me a while to get to my diet to this place – bouts of sickness, stubbornness and serious soul searching – but when you hold a baby in your arms, your perspective changes. You want to put the best food into both of your bodies and you want the world’s resources to be looked after for them to enjoy in years to come. As for the lifestyle side of things, I've always been a runner and loved exercise, so I now just incorporate the kids into that. I do yoga a few times a week with my 4 month old and the 2 year old comes on morning runs with me. We often stop to ‘earth’ or meditate in the park together half way along.

 

When & how did you first begin cooking?
I was one of the lucky ones. My mum always prioritised healthy food and home cooking. My personality is very inquisitive, so from my early teens I'd pop in the kitchen with her and watch what she was doing and look at how she was preparing things. By the end of high school, I was cooking regularly and that love for cooking really turned up a notch when I met my gorgeous husband – we are both big foodies and love to cook together.

 

When did you realise how much you loved it?
The real love for cooking came on when I had my first child. He came into the world very unwell. He was born 2 months early and battled to get well. I knew from the day he was born that I needed to change – I needed to prioritise food as medicine for us both. Food became so interesting when I had that epiphany. I loved creating recipes that were delicious and good for us all. Now I'm concentrating on kids’ lunchboxes and helping parents to pack them with nutritious, easy to make recipes.

 

What inspired you to start doing what you do?  How has your website developed and what have been some milestones for you?
My kids and my loyal followers inspire me. I love trying something new and my 2 year old saying, "Mmmm...yum...Mumma...more?" It also warms my heart when I get an email from a follower saying, “Stace, we tried this and we all loved it”. My blog has grown fairly fast. I got lucky. Very early on I started working with a number of corporates, developing recipes, with plans to move it to the next level this year. Becoming a health coach and building a great client base has been a milestone for me, as has creating and selling my eBook - A Healthy Lunchbox. Truth be told, these milestones inspire me even further.

 

What do you love about living in Sydney? Are there any restaurants, cafes, stores you visit for inspiration?

I love Sydney, although daily I wish I lived closer to my family who are on the Central Coast. We live very close to the harbour and I love that my son thinks Dadda works on a "row-row" (he catches a ferry to work).  Each afternoon we look for fish when we walk down to meet him. We love it. There are not many places in the world that you can centre such a calm, safe life around the water. Sydney is terrific. As for cafes and stores, I visit About Life Natural Marketplace almost daily, not only to get my haul of Loving Earth goodies but to enjoy nourishing breakfasts and to pick-up pantry staples.

 

When did you first become aware of Loving Earth?
In the very, very early days, I bought Loving Earth products online because no store near me stocked them. I originally fell in love with your activated nuts and seeds. Not long after, I became a huge fan of your Buckinis for breakfast and more recently, you won my heart with the carob chocolate line (I'm allergic to cacao). Clearly, my trolley is now overflowing with Loving Earth!

 

What's your favourite way to use our foods?
In the kids’ lunchboxes of course! My A Healthy Lunchbox e-Book is filled with recipes that use Loving Earth foods. My Sweet Potato Muesli Bars, Bircher In A Biscuit and 2 Ingredient Cookies recipes spring to mind. I am clearly a serious Loving Earth fan.
