If you don't want to use the pumpkin you could use some pre-made pastry from your local shop or leave the pastry out entirely and use the filling for a deconstructed samosa salad.

Most of the preparation is carried out the night before, leaving you free in the morning to sit and really enjoy you meal.

Most of the flavour is right beneath the skin so make sure you buy organic and give them a good scrub before using. Carrot cake has really stood the test of time and this recipe mixes things up combining carrot and parsnip in a lovely moist cake!
