Vegan Chocolate self saucing pudding

ingredients

⅓ cup Loving Earth Coconut Sugar

½ cup gluten free flour (best quality you can find)

½ cup almond meal
-
1 tsp baking powder
-
50g melted Loving Earth Dark Chocolate
-
1 flax egg (1 tbsp flax meal mixed with 3 tbsp water)

2 tbsp Loving Earth Coconut Oil
-
1 tbsp soy mylk
Chocolate Sauce
-
2 tbsp Loving Earth Cacao
-
½ cup Loving Earth Coconut Sugar

200ml boiling water
method
- Step 1 :Preheat oven to 180C.
- Step 2 :In a bowl combine the coconut sugar, flour, almond meal and baking powder, stir to combine.
- Step 3 :Prepare the flax egg by mixing 1 tbsp flax meal with 3 tablespoons of water, set aside for 5 minutes.
- Step 4 :Melt the chocolate and add to the dry mix along with flax ‘egg’ coconut oil and mylk.
- Step 5 :Stir to combine and pour into a greased baking dish (approx. 20x20cm).
- Step 6 :Prepare the sauce by mixing all of the listed ingredients, pour over the batter and bake in the oven for 20 – 25 minutes.
