Coconut Buckwheat Porridge
It’s the perfect breakfast for those who are sensitive to all things gluten and/or cant find gluten free oats. I prefer it to regular porridge! - Amy Sinclair from The Lush Scoop

ingredients
Buckwheat Porridge

1 cup Plain Buckinis
-
½ cup water
-
1 can (270ml) organic coconut milk
-
1 tsp cinnamon
-
1 Tbs Coconut Sugar
-
1 tsp Mesquite Powder
-
1 tsp Loving Earth Maca Powder
-
* extra water & psyllium husk if needed
Optional Toppings

sunflower seeds, chia seeds, chopped banana, chopped organic pear
method
- Step 1 :Place the Buckinis in a saucepan on medium heat with the water.
- Step 2 :Cook the Buckinis until the water is absorbed, then add half of the coconut milk and continue to let it cook, gradually adding more coconut milk until the Buckinis becomes soft, usually takes 10-15 minutes in total. If the porridge seems too runny, add a teaspoon of psyllium husk (at a time) to thicken it up. If it’s too dry, gradually add water until it’s at your desired consistency.
- Step 3 :Add the cinnamon, coconut sugar, mesquite and maca powders and stir until combined.
- Step 4 :Serve with your favourite toppings, and enjoy!
