Lime Avocado Pie with Buckini Crust
Fresh, packed full of zest & covered in coconut. Treat your tastebuds this summer with a Lime Avocado Pie fullĀ of flavours.
ingredients
Seed & Nut Buckini Crust

1 cup Nut & Seed Buckinis

3 tablespoons Loving Earth Coconut Oil
-
Pinch of Himalayan salt
-
Half a ripe banana
-
Tablespoon maple syrup
Lime Avocado Filling
-
2 cups soaked Cashews (up to 4 hrs or soak overnight and rinse well)

Juice of 5 limes
-
Zest of 1 lime
-
1/4 cup maple syrup or raw honey
-
1/4 cup organic coconut cream
-
3 tablespoons Loving Earth coconut oil (melted)

1 Avocado
-
Pinch of Himalayan salt
Garnish
-
1 lime sliced
-
1 cup Loving Earth coconut chips
method
- Step 1 :Seed & Nut Buckini Crust -
Blend all ingredients in food processor until sticks together
- Step 2 : Evenly Press into a springform pan, cover top of pan with cling wrap and place in freezer 45 min
- Step 3 :Lime Avocado Filling -
Blend all ingredients together on high speed in a vitamix and spoon onto buckini crust
- Step 4 :Freeze until set. I like to freeze overnight then take out in the morning and serve the following evening
- Step 5 :Garnish with fresh cut lines and Loving Earth coconut chips
