Cherry Ripe Bites
The original Cherry Ripe is made with glacé cherries, which have extra sugar and preservatives added. They also contain other fillers and a little more sugar than I like. So, if you’re a big fan of the flavour combo like me, this simple recipe will help you make them at home. They are fab as gifts during the festive season. You will need silicone trays or moulds.

250g fresh cherries

2 tbsp. Goji Berries

¾ cup Desiccated Coconut

1 tbsp. Coconut Oil, melted

100g Dark Chocolate, chopped roughly
method
- Step 1 :Preheat oven to 160°C (140°C fan-forced).
- Step 2 :Cut cherries in half and remove pits. Spread cherries, cut side up, on a paper-lined baking tray and roast for 20 minutes.
- Step 3 :Place roasted cherries and goji berries in a 2-cup capacity jug. Blend using a handheld blender until mostly smooth. Add coconut and oil. Mix to combine.
- Step 4 :Fill a silicone ice-cube tray or chocolate truffle mould with the cherry berry mixture and place in the freezer for 1 hour to set.
- Step 5 :Once set, remove from the mould. Melt chocolate in a small heatproof bowl over a saucepan of boiling water. Dip cherry ripe bites in melted chocolate. Set aside on baking paper for the chocolate to set.
- Step 6 :Keep cherry ripe bites in an airtight container in the fridge for up to 1 week.
