Chunky Monkey Ice Cream
The naughtiest nice-ream ever! Filled with all our Loving Earth Favourites to satisfy every Monkey!
Makes 600-700ml
ingredients
Ice Cream

2 cups raw macadamias
-
3 frozen bananas
-
1 cup coconut cream
-
2 tbsp Coconut Oil, melted
-
½ tps Vanilla Bean Powder
-
pinch of sea salt
Loving Mix in’s
-
1 tbsp maple syrup
-
80g Creamy Coconut Mylk Chocolate
-
Chocolate Coated Almonds In Mylk & Caramel Chocolate

Walnuts (optional)
method
- Step 1 :Soak the macadamias in filtered water for 4 hours. Drain and rinse.
- Step 2 :Combine the drained macadamias and coconut cream in a blender and blend on high speed until you have a completely smooth cream.
- Step 3 :Add the frozen banana chunks, sea salt, coconut oil, and vanilla beans. Blend the mixture until smooth.
- Step 4 :Chop and fold in your Loving Earth mix in’s!
- Step 5 :Scrape the ice cream mixture out into a lined cake tin. Drizzle some maple syrup on top once in the pan for a caramel ripple. Freeze for at least 4 hours.
