Neapolitan Icecream Cake
The inspiration for this came from the warmer days and thinking about ice cream. Neapolitan reminds me of summer and how there would always be that family member that ate all the chocolate. Now we have a delicious healthy version to have ice cream cake without the nasty additives!
The strawberry layer cuts through the creaminess of the vanilla and chocolate layers. The addition of the Paleo Mix gives an amazing texture and extra nutrients. I plan on always having some over this cake in my freezer so I can sit out in the sun and unleash my inner child. Plus, how good would this be for healthy ice cream cake for a child’s birthday party?!
ingredients
Chocolate layer

3 medium Bananas (preferably frozen)

1 tbsp of Cacao Powder

1 tbsp of Coconut Paste, melted

½ cup of Cashews (soaked for 4 hours)

1 cup of water or coconut milk (I used water but if you want a creamier result use coconut milk)
Vanilla layer
-
1 ½ tsp of Vanilla Powder
-
1 cup of Cashews (soaked for 4 hours)

1 tbs of Coconut Paste, melted

2 bananas (preferably frozen)

1 cup of water or coconut milk
Strawberry layer
-
1 ½ cups of strawberries (preferably frozen)

1 cup of water or coconut milk
-
½ cup of Cashews (soaked for 4 hours)

1 tbsp of Coconut Paste, melted
Layer in between
-
1 ½ cups (half a cup each layer) Protein Paleo Mix or Choc Berry Paleo Mix
method
- Step 1 :Line a cake tin with baking paper. Sprinkle a layer of the Paleo Mix over the bottom.
- Step 2 :Blend the chocolate layer until smooth and pour evenly over top of the Paleo Mix. Put in the freezer for 30 minutes to set.
- Step 3 :Next spread a layer of Paleo Mix on top on the chocolate layer - it should be hard enough that it doesn’t sink into the chocolate layer.
- Step 4 :Blend the vanilla layer until smooth and pour evenly over top. Sprinkle over another thin layer of Paleo Mix, spread evenly with the back of a spoon. Let set for another 30 minutes in the freezer.
- Step 5 :Spread another layer of Paleo Mix over the vanilla layer. Blend the strawberry layer until smooth and again pour evenly over top. Set for another 30 minutes in the freezer.
- Step 6 :Sprinkle one final handful of Paleo Mix over top and cut with a good knife that has been run under hot water. Serve with chocolate pieces. This can be kept in the freezer for up to one month – just remove 20 minutes before serving.
