Caramelised Banana Buckinis Popsicles
Pure heaven in a mouthful. This combination of flavours, just wow.
Caramelising the bananas first adds a great depth of flavour, the passionfruit adds a beautiful tang to the rich, creamy mixture. And just when you’re getting sad that the popsicle is nearly over you get to the best bit! Salted Caramel Chocolate with crunchy activated Buckinis!
Plus, they are oh so pretty. Serve these on a hot day as a dessert or to kids when they get home from school.

3 passionfruit

3 bananas

2 tbsp of Coconut Nectar or maple syrup

½ tsp of Vanilla Powder

pinch of cinnamon

2 cups of coconut milk

1 block of Salted Caramel Chocolate

1 cup of Caramelised Buckinis
method
- Step 1 :Preheat oven to 160 degrees celsius . Scoop ½ a passionfruit into each popsicle mould.
- Step 2 :Chop up the bananas and place on baking tray, drizzle with coconut nectar and put in oven to caramelise for roughly 20 minutes.
- Step 3 :Blend bananas, vanilla, cinnamon and coconut milk until smooth.
- Step 4 :Pour into the moulds about a centimetre from the top and let set in freezer for 30 mins
- Step 5 :Melt the Salted Caramel Chocolate over a double boiler. Spoon a couple of tablespoons onto of the banana mix in the moulds - I filled it to the top (the mix should be hard enough that the chocolate doesn’t sink through). Place the Buckinis in the chocolate mix (as many that can fit in each mould).
- Step 6 :Put back the freezer, standing upright for 4 hours. Enjoy !
