Choc Nut Cake
No introduction needed for this. It's so yum that it's hard to stop at one piece... Oh, and did I mention there is no added sugar? Ideal for those quitting sugar and wanting to watch their waistlines.

Filling

7 dates*

2 ½ tbsp peanut butter

3 tbsp coconut milk

1 tbsp Vanilla Powder

4 tbsp Cacao Powder

¼ cup Coconut Oil, melted

4 tbsp boiled water

other toppings of your choice (I used Goji Berries & pistachios)
Base
-
½ cup dates*
-
1 cup activated nuts of your choice
-
1/3 cup Coconut Oil, melted

¼ cup Shredded or Desiccated Coconut

*If the dates seem hard, soak them in boiling water for 5 minutes. Discard the water and proceed with the recipe as normal. This also adds extra moisture to the base.
method
- Step 1 :Place all the base ingredients in the blender & mix until finely chopped up.
- Step 2 :Once the mixture resembles crumbs, press into a lined slice dish or cake tin. Place into the fridge while you prepare the topping.
- Step 3 :Place all ingredients in a high powered blender or food processor and mix until it's a smooth chocolatey consistency. If it's too dry, add a tablespoon or so of extra of hot water.
- Step 4 :Place filling on top of the base, then scatter coconut (and whatever else you choose) on top.
- Step 5 :Place in the fridge for 1-2hrs before serving.
