Fresh As Burger
This a a fresh and easy vegetarian burger made by our production staff. We though we would share their comments on why they decided to make the burger for our Monday lunches.

SERVES 4
ingredients

4 tbsp mayonaise (vegan)

1 red onion

340g can sweetcorn
-
2 brown onions
-
1 beetroot
-
400g can chickpeas
-
½ bunch coriander
-
½ tsp paprika
-
½ tsp ground cumin
-
zest of 1 lemon
-
3 heaped tsp plain flour
-
sea salt
-
Coconut Oil
-
1 small round lettuce
-
tomato ketchup
-
4 x burgers buns
method
- Step 1 :Firstly up cook the beets for 20-40 mins (depending on size) in boiling water until soft. Slice evenly.
- Step 2 :Drain and place the chickpeas and sweetcorn into a food processor. Pick the coriander and add half to the processor along with all the stalks.
- Step 3 :Add spices, lemon zest, flour and a pinch of salt and pulse, leaving chunks for texture.
- Step 4 :On a flour dusted surface, divide and shape the mixture into 4 evenly sized patties, about 2cm thick.
- Step 5 :Place on a tray and put in a fridge for about 30 minutes to firm up.
- Step 6 :Heat a splash of coconut oil in in a large frying panover a medioum heat. Once hot add patties and cook through, turning halfway.
- Step 7 :Meanwhile wash and spin four nice lettuce leaves. Finely slice tomatoes and red onion.
- Step 8 :Slice up the brown onion and fry in oil over a medium heat . Stir in a tsp of Coconut Sugar until caramalized.
- Step 9 :Toast the bun under a warm grill. Squeeze a large dollop of mayonaise on each bun then layer over a couple of slices of tomato, a lettuce leaf, the veggie pattie, beets and finally top with the caramalized onion.
- Step 10 :ENJOY!!
