Rice Paper Rolls With Peanut Satay Dipping Sauce
These Asian inspired summer rolls are perfect for a light, fresh meal or snack. While these are filled with carrot, cucumber, bean sprouts, capsicum, avocado, fresh herbs, rice noodles and crushed peanuts, feel free to add whatever vegetables and protein you like! Served with this delicious satay sauce, these babies become next level good! Enjoy.
MAKES 16 Rolls
ingredients

½ packet of vermicelli rice noodles (approx. 100 g)

16 rice paper sheets

½ cup of unsalted peanuts

1 packet of bean sprouts
-
2 carrots
-
1 Lebanese cucumber
-
32 fresh mint leaves
-
16 fresh coriander sprigs
-
1 avocado
-
1 red or yellow capsicum
method
- Step 1 :Prepare all elements: Cook noodles according to packet instructions, slice the carrots into thin batons and blanch for 1 minute, slice the remaining vegetables, crush peanuts with a mortar & pestle. Have each ingredient layed out and ready for rolling.
- Step 2 :For assembly: place one sheet of rice paper in a tray of warm water for 30 seconds until soft & place onto a clean working surface. Layer 2 mint leaves, coriander, noodles, bean sprouts, cucumber, carrot, capsicum, avocado and crushed nuts.
- Step 3 :To roll, fold the sides inwards and roll up firmly to enclose filling (this will be detailed on the rice paper sheet packet!)
- Step 4 :Repeat for the remaining 16 sheets. Serve with peanut satay dipping sauce.
