Lucuma Vanilla Ice Cream
Ice cream really feels like the ultimate indulgence; creamy, smooth, rich and sweet! To me it’s the holy grail of desserts. It’s so nice to make a healthier version at home that doesn’t require an ice cream maker!
To add a textural element to your ice cream you can easily add chopped chocolate or your other favourite goodies to mix through before freezing.
1 medium tin
1 cup raw Cashews
1 cup coconut milk
½ cup Lucuma Powder
1 tbsp Mesquite Powder
¼ cup Yacon Syrup or Agave Syrup
1 tsp Vanilla Powder
- Step 1 :Place all ingredients in high powered blender or food processor.
- Step 2 :Blend until the mixture is completely thick and smooth, about 5 minutes. You may need to stop and scrape down the sides a few times.
- Step 3 :Spoon into a freezer safe container and smooth over the top. Place directly in the freezer overnight, or until firm.
- Step 4 :Serve with your favourite dessert or simply sprinkled with goji berries.
