Vegan Bolognese Spaghetti
My partner claims this recipe is better than a meat bolognaise. It’s easy to make and you can use the same filling for a healthy lasagne. To make it even more appealing to kids, you can try adding fun dinosaur or farm animal shaped pasta.

ingredients

1 tbsp Coconut Oil

1 med brown onion, diced

2 cloves garlic, finely grated

1 cup tempeh, grated

2 cups tomatoes, diced
-
½ cup white grape juice
-
⅓ cup organic tomato paste

1 tsp sea salt
-
2 tsp dark Agave Nectar or Coconut Sugar

1 tbsp basil, torn
-
1 tsp rosemary, finely chopped
-
1 tsp oregano, finely chopped

Fun shaped pasta, cooked
method
- Step 1 :Gently fry the onions, garlic, tempeh, sea salt, rosemary and oregano with Coconut Oil until the onions are a nice, golden colour.
- Step 2 :Add the remaining ingredients and simmer for 15 minutes.
- Step 3 :Cook pasta.
- Step 4 :Taste for seasoning, pour over cooked pasta and serve to hungry family members.
