Chai Spiced Breakfast Rice
The Jain diet is a non violent diet originating out of Indian, where kindness and compassion flourish. This breakfast meal takes much of this into considering, whilst also making great use of Indian herbs and spices. It is the perfect solution to left over rice you have cooked the night before, as some time spent in the fridge helps produce a rich a creamy porridge!
SERVES 3-4
ingredients
For the Rice

1 cup of Brown Rice

3 cups of water (alternatively you can use 1½ cups of water and 1½ cups of nut milk, for a creamy consistency)

1 cinammon stick

pinch of sea salt
For the Chai Poached Fruit
-
2 cups of water
-
3 tsp of roobios tea, or two tea bags torn
-
1/2 tsp of ground ginger or 4-6 slices if using fresh
-
1 tsp of pepper corns
-
2 sticks of cinnamon
-
8 cardamon pods, crushed
-
2 whole star anise
-
1 Vanilla Bean, split length ways

5 dried figs
-
10 organic dried apricots
-
1/2 a cup of Mulberries and Goji Berries

Sweetener (honey, Agave, Coconut Sugar etc.) and yogurt as desired
method
- Step 1 :For the Rice - Place all ingredients into a saucepan and bring to a slow boil. Reduce heat and let simmer for 20 minutes, the longer the better, making sure the rice doesn't catch at the bottom of the pan and adding more water if you need too.
- Step 2 :For the Chai Poached Fruit - Place all ingredients in a saucepan and bring to a gentle boil. Let bubble gently for about 10 minutes. Strain the tea, reserving the liquid and return it back to the pan.
- Step 3 :Add the fruit, allowing it to macerate in the tea and become nice and plump and rosie red. The fruit can sit in the tea for any period of time, just make sure it doesn’t reduce too much or boil to fast breaking your fruit apart.
- Step 4 :When the rice is ready spoon into a bowl, enough to satisfy each individuals breakfast cravings. Use a ladle to spoon in some of the tea, enough to make a nice little bath for the porridge. Finish with a generous dose of fruit and serve with a nice drizzle of honey or your sweetener of choice. You can add a dollop of yogurt if you like or a nut/seed mix, but be sure to drink any left over tea from the poaching fruit.
- Step 5 :If using already cooked rice, simply heat 1 cup of rice in a pot with 1/2 cup of water or nut milk, stirring until the rice has warmed through and it is nice a creamy.
