Eyes on Kale

SERVES 1
ingredients

1tsp Coconut Butter
-
2 big handfuls of kale
-
1 clove fresh garlic, minced

pinch of sea salt

2 free range organic eggs
-
5-10 cherry tomatoes, halved
-
sprinkle of flat leaf parsley (optional)

black pepper to taste, cracked
method
- Step 1 :Preheat oven 180C. Sauté garlic, kale and salt for a minute or two. Transfer into baking dish.
- Step 2 :Arrange cherry tomatoes on top. Crack eggs on top to create two 'eyes'. Sprinkle parsley on top and season with black pepper.
- Step 3 :Bake in oven for 10 minutes.
