Raw Buckwheat & Maqui Berry Porridge
I find the best breakfasts to be those that take minimal preparation but also provide you with the best nutritional start to the day. As a result this has been my go to meal of late. Most of the preparation is carried out the night before, leaving you free in the morning to sit and really enjoy you meal.
Serves 4
ingredients

1 cup of Buckwheat

1 cup of Almonds

1 apple, grated

Juice of 1 orange
-
1 -2 tablespoons of Maqui Powder
Toppings

Mandarin
-
Kiwi Fruit
-
Berries
-
Cacao Nibs
method
- Step 1 :In separate bowls soak the almonds and buckwheat for minimum 4 hours or ideally overnight.
- Step 2 :Drain and rinse the buckwheat and almonds and place in a food processor
Add all reaming ingredients, process until smooth.
- Step 3 :Add all reaming ingredients, process until smooth.
- Step 4 :Place in serving bowls and top with seasonal fruit and any nuts and seeds you have handy!
- Step 5 :This porridge will keep in the fridge for up to a week, make sure you cover it tightly!
