Buckwheat and Mulberry Loaf
This loaf is super nutritious and also very easy to make. It is full of whole, unprocessed ingredients making it a great snack to have in the house. Feel free to mix it up a little, replacing the mulberries with your favourite dried fruit or nuts.
MAKES 12 SLICES

1 ½ cups of Activated Buckinis

½ cup of Coconut Oil, melted

¾ cup of Coconut Sugar

2 tbs of Chia Seeds

½ cup of water

1 tsp baking powder

½ tsp of bicarb soda

1 tsp of Vanilla Powder
-
1 tsp of apple cider vinegar
-
½ cup of almond milk
-
¼ cup of mulberries
-
¼ cup of Walnuts
-
½ cup blackberries
-
Activated ABC Butter to serve
method
- Step 1 :Pre heat oven to 180 degrees Celsius. Soak the chia seeds in water for at least 10 minutes.
- Step 2 :Process the buckwheat in a food process until it resembles a super fine crumb.
- Step 3 :Next place the processed buckwheat, vanilla powder, bicarb, baking powder, coconut sugar in a mixing bowl. Add the vinegar, chia seeds, coconut oil, almond milk and mix thoroughly.
- Step 4 :Gently fold through the walnuts and mulberries.
- Step 5 :Pour mix into a loaf tin and scatter with berries, push them in a little so they are submerged in the batter.
- Step 6 :Bake for 45 minutes or until a skewer comes out clean. Serve with a smear of Activated ABC Butter or your favourite jam!
