Coconut Mango ‘Weis Bar’ Slice
These little morsels of heaven are summer in a bite! They taste of deliciously sweet mango and coconut with a touch of tangy lime and passion fruit. They allow you to savor that insanely good mango taste and are perfect as a light and nourishing treat on a hot summer day or night. 1 cup of Plain Buckinis

½ cup of Activated Almonds

8 fresh medjool dates, pitted and chopped

1 tsp Mesquite Powder

½ cup Shredded Coconut
-
1 tbsp Coconut Oil

1 tsp Coconut Nectar

¼ cup coconut water
-
1 cup of Raw Cashews
-
½ cup coconut cream
-
flesh of 2 large or 3 small ripe mangoes
-
juice of 1 lime

1 tbsp Coconut Nectar

Passion fruit, extra mango and coconut to top
method
- Step 1 :1. In a food processor, process buckinis and almonds until a fine crumb is reached.
- Step 2 :2. Add dates, coconut oil + mesquite powder then process until well combined.
- Step 3 :3. Add coconut water + coconut oil and process until a sticky base is reached.
- Step 4 :4. Press into a lined tray and place in the freezer to set for 10 minutes.
- Step 5 :5. Process cashews until a ‘butter’ is almost reached, it will appear to be crumbly.
- Step 6 :6. Add remaining ingredients and blend until very smooth and creamy. Pour on top of the set base, smooth with a spatula.
- Step 7 :7. Top with extra mango, passion fruit, coconut or any desired fruit. Place in the freezer for 4+ hours to set.
- Step 8 :Slice, serve and enjoy! Store in the freezer.
