Papaya, Plum & Cashew Salsa
Summer is the time for barbeques and picnics so it’s nice to have a few quick and delicious recipes you can rely on to bring along with you. With all the gorgeous summer fruits popping up I wanted to create a zesty sweet salsa to accompany savoury dishes. The sour plums and lime create a nice balance with the sweet papaya and creamy cashews. - Emily Williamson
ingredients

½ large papaya

2 sour plums
-
½ red onion
-
5 spring onions
-
1 large tomato
-
1 lime, juice + zest

½ cup Cashews
method
- Step 1 :1. Dice the papaya and plums into approximately ½ cm cubes. Finely dice the red onion, finely slice the spring onions and dice the tomato and all them to a medium bowl.
- Step 2 :2. Squeeze over the lime juice & sprinkle over the zest. Stir to combine.
- Step 3 :3. Roughly chop the cashews and combine right before serving - if you add them too soon the cashews will soak up the juice and become soft.
