Oh So Good Granola
We love breakfast here at Loving Earth and if it’s not something savoury then it’s usually fresh fruit and coconut yoghurt topped with granola.
This granola recipe was inspired by the moreish Sarah Wilson recipe from her IQS days – thank you Sarah!
4 Cups
ingredients

2 cups Paleo Protein Mix

2 cups Coconut Flakes

½ cup rolled oats

3 tblsp coconut oil (melted)

3 tblsp maple syrup

2 tblsp chia seeds

1 tsp cinnamon
method
- Step 1 :Preheat over to 120 degrees (100 if fan forced)
- Step 2 :Melt the coconut oil in a pan or microwave.
- Step 3 :Mix together the Paleo Protein Mix, coconut flakes, oats, chia seeds and cinnamon in a bowl.
- Step 4 :Add in the melted coconut oil and maple syrup and mix thoroughly.
- Step 5 :Spread mixture evenly onto a baking tray and place in over.
- Step 6 :Bake for 20 mins or until golden, mixing halfway through.
- Step 7 :Remove from the oven and let cool and then mix through cranberries/dried fruit and salt.
- Step 8 :Use on yoghurt, overnight oats, acai or smoothie bowls, or grab handles as a snack (no judgement here!)
- Step 9 :Store in an airtight container for up to 2 weeks.
