Love Letters
Four little letters, one tiny word, and a whole lot of deliciousness filled with love.
They are full of goodness too thanks to Loving Earth’s cold pressed organic coconut oil, known for its healthy saturated fats which boost brain function and heart health, and the raw cacao powder which is high in antioxidants and other nutrients that help keep us energised, healthy, and happy. And we can’t forget the indulgent layer of Loving Earth’s Almond Crunch cashew mylk chocolate which not only tastes divine but is jam packed with plant-based nutrients.
Little kitchen helpers will love to get involved (particularly in the chocolate melting process!) but watch out for disappearing letters! As you can see, it was very nearly E for ‘eaten’!

150 g (1 1/3 cups) almonds

100 g (3/4 cup) fresh dates, pitted

60 ml (1/4 cup) Loving Earth cold-pressed coconut oil

1 tbsp Loving Earth raw cacao powder

1 tsp vanilla

80 g (1 bar) Loving Earth Almond Crunch cashew mylk chocolate, melted
method
- Step 1 :Soak nuts in 500 millilitres (2 cups) of filtered water with one tablespoon of apple cider vinegar for a minimum of two hours/up to six hours. Then rinse thoroughly with fresh water. This will increase the digestibility of the nuts and remove any moulds and mycotoxins.
- Step 2 :Preheat oven to 180 C.
- Step 3 :Line a baking tray with parchment paper and roast nuts for 10 to 15 minutes until dry and crunchy. Remove and let cool.
- Step 4 :Combine all ingredients in a high-speed food processor until you have a fine crumbly dough.
- Step 5 :Press into silicone molds until 70% full and fill the remaining space with melted chocolate.
- Step 6 :Refrigerate for at least two hours. Serve and enjoy. Keep in an airtight container for up to two weeks.
