Banana Choc Chip Loaf
This banana bread recipe is the perfect breakfast/afternoon snack hybrid. It's packed full of nutrient dense ingredients like oat flour, almond butter and bananas, but has a satisfying sweet treat side thanks to the Loving Earth chocolate. Just try stopping at one slice!

Dry Ingredients

1.5 cups Plain GF flour

1 cup oat flour

1 cup coconut sugar

1 tsp baking powder

0.5 tsp baking soda

1 tsp cinnamon

½ cup Loving Earth Creamy Chocolate (chopped)
Wet Ingredients
-
3 mashed bananas
-
¼ cup olive oil
-
¾ cup oat milk
-
1.5 tbsp almond butter
-
0.5 tsp vanilla extract
method
- Step 1 :Preheat the oven to 180 degrees Celsius. In a large bowl combine, gf flour, oat flour, coconut sugar, baking powder, baking soda and cinnamon. Mix to combine.
- Step 2 :In a separate bowl, mash bananas and add remaining wet ingredients. Stir with a wooden spoon until well combined. Then combine wet and dry ingredients. Mix, but please do not overmix, otherwise the banana loaf wont rise. Finally fold in the chopped chocolate chunks.
- Step 3 :Line a loaf tin with baking paper. Then transfer the cake batter into the baking tin. Decorate with extra choc chunks and a sliced banana. Bake for 50-53 min.
- Step 4 :Let cool in tin. Slice and enjoy!
