Raspberry and Coconut Slice
It’s pink, it’s beautiful, it’s delicious, and a perfect Mothers’ Day treat for the special ladies and Mumma Bears in our lives.
Not only is it raw, vegan, gluten-free, dairy-free, and refined sugar free, but it’s also filled with nutrients thanks to Loving Earth’s delicious buckinis: a grain-free, gluten-free, wholefood mix that combines raw activated buckwheat (a protein-packed seed) with superfoods such as Maca and Mesquite. And let’s not forget the good dose of antioxidants due to Loving Earth’s raw cacao powder. We reckon all of this makes it more than ok to go back for seconds!
So, tell Mum to put her feet up, pop the kettle on, and serve up an afternoon tea filled with love and a whole lot of goodness.

Base

125 g (1 cup) almonds, finely ground

60 g (1/2 cup) Loving Earth Caramelised Bukinis, roughly ground

85 g (1 cup) dates, pitted and soaked for 10 minutes

30 g (1/2 cup) desiccated coconut
-
1 tbsp Loving Earth raw cacao powder
-
2 tbsp Loving Earth coconut oil
-
1 tbsp maple syrup
Filling
-
100 g (1 cup) frozen raspberries
-
60 g (1/2 cup) cashews
-
60 g (1 cup) desiccated coconut
-
3 tbsp Loving Earth coconut oil
-
2 tbsp maple syrup
-
2 tsp vanilla extract
CHOCOLATE TOPPING
-
1 bar (80g) Loving Earth Cashew Mylk chocolate
method
- Step 1 :Add all base ingredients to a food processor and blitz until it resembles fine crumbs and sticks together when rolled. Spoon mixture into a lined tray (we used a 20cm x 20 cm tray) then press down with the back of a spoon. Place in the freezer for about an hour.
- Step 2 :Add all the filling ingredients to a high-speed food processor and blitz until smooth. Remove the base from the freezer and using the parchment paper to lift, remove base from the tin. Cut into half so you have two rectangles.
- Step 3 :Spread the filling evenly over one of the rectangles. Place the other rectangle on top so the filling is sandwiched then return to the freezer for another hour.
- Step 4 :When firm, remove from the freezer. Slice into small squares and drizzle with melted Loving Earth Mylk chocolate. Allow to set in the refrigerator then serve and enjoy! Store in an airtight container in the refrigerator for 3 - 4 days.
