Raspberry Chocolates

As Charles M. Schulz once said, “All you need is love. But a little chocolate now and then doesn’t hurt” ..
Raspberry and dark chocolate pairs wonderfully together. These chocolates are the perfect combination of sweet, bitter, creamy and fruity. A nourishing, delicious treat for proper of all ages. I hope you love it ♥️
ingredients
Raspberry Chocolates

1 cup cashews, soaked for 2-4 hours

1/2 cup coconut milk
-
1/4 cup maple syrup

1/4 cup coconut oil
-
1 tbsp lemon juice
-
handful of fresh raspberries
-
1/2 tsp vanilla bean powder

1 bar Loving Earth Dark Chocolate (70% or 85%)
method
- Step 1 :Gently melt your dark chocolate in a glass bowl sitting in hot water.
- Step 2 :Add 1 tbsp melted chocolate into each of your moulds (these should be small, bite-sized moulds). Spread the chocolate evenly around the moulds, making sure you also cover the sides of the moulds. Place in the freezer to set.
- Step 3 :Add cashews, coconut milk, maple syrup, coconut oil, lemon juice, raspberries and vanilla to a high-speed blender and blend until smooth.
- Step 4 :Fill each mould 3/4 full with the cashew cream. Place in the freezer until solid.
- Step 5 :Add a final layer of melted chocolate on top, then place the chocolates back in the freezer or fridge to set.
