Citrus & Fennel Salad
Citrus and fennel are an old time classic combination. In this salad they make a refreshing combination when combined with the mildly sweet dressing and fragrant mint. Perfect as a light lunch or even a post dinner snack when you are after something sweet and refreshing!

ingredients

2 oranges

1 lemon

1 fennel bulb
-
juice of 1 lemon

¼ cup of Coconut Nectar
-
¼ cup of olive oil
-
pinch of salt and pepper
-
¼ tsp of powder ginger or finely grated fresh ginger

2 tbs of sunflower seeds
-
1/4 cup of Activated Almonds
-
2 tbs of Activated Pumpkin Seeds

mint sprigs to garnish
method
- Step 1 :Prepare your citrus by removing the skin and as much of the white pith as you can manage with a sharp knife.
- Step 2 :Slice into ½ a centimetre, or smaller, rounds.
- Step 3 :Finely slice your fennel bulb using a sharp knife or a mandolin.
- Step 4 :Place the citrus on your serving tray in an even formation, scatter with the fennel.
- Step 5 :Mix the Agave, oil, lemon juice, salt and pepper and ginger. This will make more than enough dressing for another salad, pour your desired amount onto the prepared citrus.
- Step 6 :Roughly chop your nuts and seeds and sprinkle on top, scatter with some freshly torn mint leaves, serve immediately!
