India is a huge country with so many different cultures and cuisines. The food and flavours in every state can differ dramatically! My family is from the North where fast food and shortcuts are seriously frowned upon. Though we are quite snobbish regarding cuisine from different regions, I decided to try my hand at a South-Indian style dish. ingredients
- 2 cups Basmati rice
- 2 tbsp Coconut Oil see product
- 8 whole cardamom pods
- 8 whole cloves
- 1 medium stick cinnamon
- Sea salt to taste
method
- Step 11.Heat up the Coconut Oil in a pot ā add the cinnamon stick, cardamom pods and cloves and heat until aromatic.
- Step 22.Gently mix in 2 cups of rice (rinse a couple of times with water first) until it is coated with the Coconut Oil. Always mix or stir rice very gently and only if you have to, a heavy hand will cause the grains to break or release starch which makes them sticky.
- Step 33.Add 4 cups water and salt to taste.
- Step 44.Bring to a boil and then turn the heat down a bit to simmer until all the water is gone. You know your rice is just right when each individual grain is cooked yet separate from each other ā not sticky or clumpy.
