- 1 cup Activated Almonds
- 1 cup Activated Walnuts
- 2 cups medjool dates, pitted
- 2 tbsp LSA
- 2 tbsp Chia Seeds see product
- 3 tbsp Coconut Oil, melted see product
- 3 tablespoons Cacao Powder see product
- 1⁄2 teaspoon cinnamon
- 60 g (1⁄2 cup) Goji Berries
- 3 tbsp Chia Seeds see product
- 3 tbsp Fine Coconut see product
- 3 tbsp Almonds, chopped
- 3 tbsp Goji Berries, chopped
method
- Step 11. Place all the ingredients in a food processor and whizz for 30 seconds or more, depending on the strength of your processor. If the mixture seems too thick to easily form into balls, add 1⁄4 cup water and whizz again.
- Step 22. Roll teaspoons of the mixture into little balls using your hands.
- Step 3Tip: ‘LSA’ is ground linseed, sunflower seeds and almonds — a major nutrient hit!
- Step 43. Combine the chia seeds, coconut, almonds and goji berries in a large bowl and give them a good mix-up.
- Step 54. Roll the balls in your topping mix to coat and place half in the fridge for munching over the next few days, and the rest in a plastic container in the freezer for another time.
