Upside Down Apple Cake
Cue Nigella voice - There’s something nourishing about using seasonal produce….but seriously it’s a pretty good feeling getting a whole heap of affordable organic and seasonal ingredients and making something wholesome and sweet to pair with a good cuppa.



Upside Down Apple Cake
ingredients
Apple Layer
- 2 medium peeled, cored, and thinly sliced apples
- 3 tablespoons Coconut Sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon vanilla powder or 1 vanilla pod (optional)
- a few drops of lemon juice
Cake
- ¾ cup Coconut Sugar
- ¼ cup Coconut oil, melted
- ½ teaspoon vanilla powder
- 1 ½ cups plain flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup water
- 1 teaspoon lemon juice
method
- Step 1Preheat oven to 175°C. Grease and line a cake pan or tin with a little oil and baking paper.
- Step 2Mix the spices with the sugar and the lemon.
- Step 3Place the sliced apples on the bottom of the tin (arrange into shapes or scatter in an even layer) and sprinkle evenly with the sugar spice mix.
- Step 4Combine the dry ingredients in one bowl and the remaining wet ingredients in another.
- Step 5Make a well in the dry ingredients and add the mixed wet ingredients, mix to combine.
- Step 6Pour the batter mixture over the apples and place in oven for 45 minutes to an hour or until a skewer comes out clean.
- Step 7Remove from oven, allow to stand for 5 minutes and then invert onto a tray.
- Step 8Serve with whipped coconut cream or simple by itself!
