Everyone knows that there is nothing like a good burger, and these sweet potato chickpea patties are a lovely excuse to eat burgers as often as you want ! Made from purely wholesome ingredients, load them up with your favourite burger toppings such as tomato, beetroot, onion relish and avocado and enjoy!
ingredients
- 1 large sweet potato
- 1 large red capsicum
- 1 can of chickpeas, rinsed and drained.
- ½ small brown onion, diced
- 1 clove garlic
- 1 tbsp tamari
- 1 egg (or chia/flax 'egg')
- small handful of parsley, chopped
- 2 tsp chilli flakes
- 2 tsp cumin
- 1 piece of grainy bread, toasted and pulsed into breadcrumbs
- 2 tbsp coconut flour
- salt and pepper to taste
method
- Step 1Place the whole sweet potato on a lined baking tray and bake at 180oC until tender - approx 1 hour.
- Step 2Whilst the sweet potato is cooking, deseed the capsicum and bake it on the same tray until slightly charred. Remove from the oven to cool before dicing.
- Step 3In a small frying pan, sauté the garlic and onion until golden.
- Step 4Using a small food processor, pulse the chickpeas until slightly chunky.
- Step 5Once the sweet potato is tender, remove its skin and add the flesh into a large bowl. Note: don't throw out the skin, it is delicious to eat by itself or with a smear of hummus or natural peanut butter!
- Step 6Add all remaining ingredients into the bowl and mix until combined. Season with salt and pepper.
- Step 7Take a small handful of the mixture and roll it into balls. Place each on a lined tray and flatten with your fingers to make patties. Bake at 180oC for 40 minutes.
- Step 8Serve however you fancy - on a wholegrain bun with salad, sweet chilli sauce, hummus etc. Or for a lighter option, serve on cos lettuce leaves and roll into wraps.
