My partner claims this recipe is better than a meat bolognaise. It’s easy to make and you can use the same filling for a healthy lasagne. To make it even more appealing to kids, you can try adding fun dinosaur or farm animal shaped pasta.
ingredients
- 1 tbsp Coconut Oil see product
- 1 med brown onion, diced
- 2 cloves garlic, finely grated
- 1 cup tempeh, grated
- 2 cups tomatoes, diced
- ½ cup white grape juice
- ⅓ cup organic tomato paste
- 1 tsp sea salt
- 2 tsp dark Agave Nectar or Coconut Sugar see product
- 1 tbsp basil, torn
- 1 tsp rosemary, finely chopped
- 1 tsp oregano, finely chopped
- Fun shaped pasta, cooked
method
- Step 1Gently fry the onions, garlic, tempeh, sea salt, rosemary and oregano with Coconut Oil until the onions are a nice, golden colour.
- Step 2Add the remaining ingredients and simmer for 15 minutes.
- Step 3Cook pasta.
- Step 4Taste for seasoning, pour over cooked pasta and serve to hungry family members.
