Burgers can be such an indulgent and heavy meal to enjoy. This recipe is totally different as it requires a wide range of vegetables and a nice dose of nuts and seeds. We enjoyed these along side fresh cos lettuce, tomato and cucumber, topped with a quick pickle and some herbed cashew cream cheese! See our photo gallery here!
ingredients
- 1 medium sweet potato, grated
- 1 cup of mushrooms
- ¼ cup of sultanas
- ¼ cup of sundried tomatoes
- 1 medium onion, chopped
- 2 tbs of Chia Seeds see product
- ½ cup of Activated Walnuts
- 1 tsp of ground coriander
- salt and pepper to taste
- enough water to help develop a smooth paste
method
- Step 1Add all ingredients into a food processor and blend until a thick patty consistency has formed
- Step 2Take a heaped tablespoon of mixture and form in to round balls, flatten until they are 1-2 cms thick, and lay on baking paper
- Step 3To cook the burgers, place on trays and place in a dehydrator set on 40 degrees. Dehydrate for 6-12 hours
- Step 4Alternatively, set your oven on the lowest possible setting. Let burgers cook until they are firm and have dried out a little (approximately 5 hours)
