A super simple and delicious topping for so many dishes. We enjoyed it sitting on top of our veggie burgers, but are also looking forward to enjoying it right through summer!
ingredients
- 2 zucchinis, finely sliced on a mandolin
- 1 white onion, finely sliced on a mandolin
- 1 ½ tsp of salt
- ¼ cup of dill fronds
- ¼ white wine vinegar
- ¼ cup of apple cider vinegar
- ¼ cup of Coconut Sugar see product
- 1 red chilli, seeded and sliced finely
- 1 tbs of yellow mustard seeds
method
- Step 1Mix zucchini, onion and salt and place in a colander sitting in a large bowl, set aside for two hours.
- Step 2Boil sugar in the vinegars until dissolved, set aside.
- Step 3Discard the liquid from the zucchini mix and add remaining ingredients to a bowl.
- Step 4Refrigerate for a further hour or until ready to serve.
- Step 5This keeps best if placed in a glass jar and left in the fridge for up to a week.
