Grilled Lemon & Gubinge Popsicles With Cucumber

Grilled Lemon & Gubinge Popsicles With Cucumber

ingredients

Approximately 4 small lemons, sliced into 3cm slices
½ cup Coconut Sugar see product
1 cup water
1 tsp Gubinge Powder see product
½ cucumber, grated

method

Step 11. Press each side of the sliced lemons into the coconut sugar to coat and then place them in a medium-hot pan. Cook slowly for 5 minutes until the coconut sugar starts to carameliseand the lemons begin to brown. Remove lemons from the pan and let cool.
Step 22. Once cool, squeeze the juice of each lemon until you have ½ cup of juice.
Step 33. Combine the lemon juice with the remaining coconut sugar, water and mix until well combined.
Step 44. Add the grated cucumber into the mould and pour over the lemon mixture. Insert popsicle sticks and freeze until firm (at least a few hours, preferably overnight).
Step 55. If you're using wooden popsicle sticks freeze them for an hour until slightly frozen before inserting the sticks.
