A fast blanch and simple seasoning is the way to go for this amazing spring produce. I served it up with San Choy Bow and a hot chilli sauce!
ingredients
- 1 cup of brown rice
- 2 tbs of Mirin
- 1 tsp of Gomasio (toasted sesame seeds with a pinch of salt)
- 2 bunches of baby bok choy
- 1 cup of broccoli florets
- 1 tbs of sesame oil
- 1 tbs of tamari
- 1 tsp of Light Agave
- 300g firm tofu
method
- Step 1Cook the brown rice in plenty of water, until tender, drain.
- Step 2Add 1 tbs of mirin and gomasio to the cooked rice, set aside.
- Step 3Cut the tofu into cubes and season with tamari and agave. Cook in oven for 10 minutes, or until the edges have colour.
- Step 4Blanch broccoli and bok choy in boiling water until bright green (approximately 1-2 minutes).
- Step 5Add sesame oil and remaining mirin to the greens, toss and serve on rice with tofu.
