Kids love this hearty and wholesome meal. With less than one hour preparation time, it’s an easy and inexpensive family dinner. The combination of sweet potato and nuts gives this recipe a cheeky African feel.
African Stew
ingredients
- 1 onion, chopped
- 1 tbsp veg oil
- 4 cups peeled chopped sweet potato
- 1 cup cooked chic peas
- 1 cup brown rice
- ½ tsp sea salt
- ¼ cup Coconut Cashew Cream or Brazil Nut Butter
- 2 cups chopped greens or kale
- 2 tbsp lemon juice
- 3 cups veg stock
method
- Step 1Sauté onions in oil for 5 minutes. Add stock, sweet potato, chickpeas, rice and sea salt.
- Step 2Bring to the boil. Lower the temperature and simmer for 45 minutes.
- Step 3Blend Coconut Cashew Cream with ½ cup of hot liquid from the stew to form a paste.
- Step 4Stir the nut mixture into the stew along with the greens. Cook for 5 minutes.
- Step 5Stir in lemon juice.
