ingredients
Buckwheat Porridge
- 1 cup Plain Buckinis see product
- ½ cup water
- 1 can (270ml) organic coconut milk
- 1 tsp cinnamon
- 1 Tbs Coconut Sugar see product
- 1 tsp Mesquite Powder see product
- 1 tsp Loving Earth Maca Powder see product
- * extra water & psyllium husk if needed
Optional Toppings
- sunflower seeds, chia seeds, chopped banana, chopped organic pear see product
method
- Step 1Place the Buckinis in a saucepan on medium heat with the water.
- Step 2Cook the Buckinis until the water is absorbed, then add half of the coconut milk and continue to let it cook, gradually adding more coconut milk until the Buckinis becomes soft, usually takes 10-15 minutes in total. If the porridge seems too runny, add a teaspoon of psyllium husk (at a time) to thicken it up. If it’s too dry, gradually add water until it’s at your desired consistency.
- Step 3Add the cinnamon, coconut sugar, mesquite and maca powders and stir until combined.
- Step 4Serve with your favourite toppings, and enjoy!
