I love, love, love lemony desserts and this week I was gifted a big bag of homegrown organic lemons and I knew just what I needed to do! Raw cheesecakes are my favourite kind of dessert to make as there's basically nothing that can go wrong when compared to traditional baked caked!- Emily Williamson
ingredients
- 1 ½ cups raw pecans
- ½ cup Coconut Chips (shredded will also work) see product
- 1 tsp Camu Camu Powder see product
- ½ tsp Ginger Powder
- Pinch of Himalayan salt
- 8 medjool dates, pitted and soaked 20 minutes
- 1 tbsp Lucuma Powder see product
method
- Step 1Grease a rectangular flan tin with coconut oil and set aside. You can use whatever tin shape you like but as a note - it makes things much easier if the base is removable!
- Step 2In a food processor blend the pecans, Coconut Chips, Camu Camu, ginger and salt until you have a fine meal. Add the dates and blend until well combined. The mixture should stick together when pressed together with your fingers. Press the crust ingredients firmly into the bottom of your flan tin. Refrigerate until ready to use.
